Peppermint Bark Eggnog

peppermint bark eggnog-2This take on the classic eggnog was created by Tom Macy of Clover Club. It builds upon that winning combination of chocolate and mint and layers it with a split base of cognac and rum. These are the perfect winter warming spirits that envelope you in their warm embrace. The next time you are in the mood for a decadent dessert drink, whip up one of these.

Peppermint Bark Eggnog
1 oz. Aged Rum
1 oz. Cognac (VS or VSOP)
1/2 oz White Creme de Menthe
1/2 oz. White Creme de Cacao
1/2 oz. Heavy Cream
1 whole egg*
Combine all ingredients in a mixing tin and shake with ice. Strain into a chilled coupe and garnish with nutmeg and peppermint bark dust. (I didn’t have any peppermint bark dust so used nutmeg and cinnamon)

*If you are worried about salmonella you can buy in shell pasteurized eggs
