El Buho Mezcal Review

El Buho Mescal

El Buho is made in the heart of Oaxaca from espadin agave plants. After harvesting they are roasted for a full week with local mesquite. Once roasted the pina pieces are crushed on a stone mill to extract the sugar rich juice. The juice is transferred to a vat for fermentation in which well water is added and the mixture is allowed to ferment for a few days. The resulting mash is then double distilled before being bottled.

El Buho is clear. On the nose there is a inviting aroma of agave, vanilla, some indistinct herbal qualities and smoke. On the palate it has rich velvety texture with vanilla, dried herbs, a hint of cocoa, and more smoke. The smoke is nicely balanced and works in concert with the other flavors without overwhelming the palate. It finishes with a spicy more pepper than ginger and a lingering whiff of smoke.

Oaxacan Old Fashioned
1 1/2 oz Reposado Tequila
1/2 oz Mezcal
1 teaspoon Agave Nectar
1 to 2 dashes of Bittermen’s Xocolatl Mole bitters
Stir all ingredients with ice in a mixing glass, strain into a chilled old fashion glass, and garnish with an orange peel.

Eve’s Answer
1½ oz. Reposado tequila
¾ oz. lemon juice
½ oz. spiced raisin syrup
1 oz. local cider
mist of mezcal
cinnamon stick garnish
Raisin Syrup: combine equal parts white grape juice, sugar, and water in a pot over low heat. Stir until the sugar dissolves and add 2 cinnamon sticks and 1 star anise pod. Steep for 30minutes. Remove the spices, add a 1/2 oz of vodka and refrigerate.
Combine all ingredients except mezcal in an iced cocktail shaker. Shake and strain into a glass filled with ice. Mist with the mezcal and grate some cinnamon on top of the drink. Add the stick as garnish.

2 oz. Mezcal
1 oz. lime juice
1/2 oz. honey syrup
1/2 oz. Domaine De Canton
3 slices of cucumber
In a shaker, muddle the cucumber. Add all liquid ingredients, shake, strain into a double old fashioned glass, preferably with a large piece of block ice. Garnish with a slice of cucumber.
